Research: Full-Fat Dairy Products Do Not Increase Metabolic Risk

A 12-week clinical study conducted by the University of Toronto revealed that full-fat dairy products did not have an adverse effect on key health indicators such as cholesterol and insulin resistance.

Full-Fat Dairy Product Research

A new clinical study, led by the University of Toronto and published in The Journal of Nutrition, suggests that full-fat dairy products can be part of a balanced diet. Researchers, headed by Prof. Harvey Anderson, reported that foods containing saturated fat may not directly increase metabolic risks, contrary to common belief. This twelve-week study suggests that the complex nutritional structure of dairy products is more decisive than their individual fat content. The findings challenge traditional dietary approaches to animal milk consumption.

Saturated Fat and Cholesterol Concerns

Milk and dairy products have long been associated with cardiovascular disease risk and high cholesterol due to their saturated fat content. Official dietary guidelines in Canada and many other countries have recommended the preference of skim or low-fat products to limit saturated fat intake. However, researchers at the University of Toronto's Temerty Faculty of Medicine stated that human-based studies do not always align with these concerns. Indeed, studies conducted by Kozeta Milliku, a researcher at the Temerty Faculty of Medicine, have also reported protective effects of milk consumption.

Clinical Trial with Seventy-Four Participants

In the published study, researchers randomly divided a total of 74 adult participants diagnosed with overweight or obesity into three different dietary groups. The first group followed a calorie-restricted program with low dairy intake, while the second group consumed 3 servings of full-fat dairy products daily with an energy-balanced diet. The third group received 3 servings of full-fat dairy products daily without calorie restriction. All groups were guided within the framework of Canadian dietary guidelines, and dairy products were supplied by the research team to the milk group participants for 12 weeks.

Blood Pressure and Nutritional Gains

At the end of the twelve-week monitoring period, researchers found no significant difference in weight gain, body composition, or cholesterol levels between those who consumed low amounts of milk and those who consumed 3 servings of full-fat milk daily. While participants consuming high amounts of dairy products showed improvements in blood pressure, their intake of calcium, protein, and vitamin D was found to have increased.

Harvey Anderson, Professor of Nutritional Sciences at the University of Toronto's Temerty Faculty of Medicine, evaluated the study's results with the following words:

"Those that had three servings of dairy didn't have adverse levels of blood cholesterol or lipids or evidence of insulin resistance."

The Biological Role of the Milk Matrix Hypothesis

Researchers explained the discrepancy between the theoretical harms of saturated fat and the neutral or positive clinical outcomes of dairy products with the milk matrix hypothesis. According to this approach, the physical structure of foods fundamentally alters how nutrients are digested and absorbed in the body.

Harvey Anderson, Professor of Nutritional Sciences at the University of Toronto's Temerty Faculty of Medicine, explained the biological mechanism with the following words:

"With dairy products, it's got two proteins -- casein and whey -- that are bound together with fat and with nutrients mixed in."

This multi-component structure allows nutrients to be released gradually into the body and affect metabolism differently than individual fats.

Nutritional Solutions for Older Adults

The research team stated that the obtained results could be critical for older adults whose energy needs decrease with age but who require quality protein. Dairy products, a traditional and familiar food for older individuals, can meet daily protein and micronutrient needs without increasing the risk of diabetes or chronic diseases. The study, advocating for a holistic evaluation of foods rather than breaking them down into individual components, offers a new perspective on dietary recommendations.

"Keep it simple, eat a variety of foods and not too much of anything."
