Trabzon Ice Cream, with its deep-rooted history, has been registered and protected by the Turkish Patent and Trademark Office.
Geographical Indication Registration Process
Trabzon Ice Cream has joined Maraş and Görele among Turkey's registered regional delicacies. According to data from the Turkish Patent and Trademark Office, the product, with a history dating back to the 1800s, was registered on September 17, 2026. The registration decision was published in the Official Geographical Indication and Traditional Product Name Bulletin dated October 1. Previously, Maraş Ice Cream received a protected designation of origin on April 18, 2018, and Görele Ice Cream on June 21, 2019. According to the document, there is no requirement for the milk used in production to be produced directly in Trabzon.
Registered Production Recipe Details
The production stages for the product, known as Trabzon Sadesi, were detailed in the registration certificate. Approximately 100 liters of cow's milk, 6-10 kilograms of sugar, and 450-550 grams of salep are used to obtain about 60 kilograms of ice cream. In the preparation process, the milk is continuously stirred and brought to a boiling point in about an hour. After adding sugar, the mixture is boiled for another two hours, and then salep, mixed with sugar to prevent clumping, is slowly added. The long boiling process, lasting approximately 5 hours in total, determines the ice cream's consistency.
